We know how to eat healthy ( for the most part) but for many, myself included its a challenge to find the time to cook. Solution:
Roast Chicken
Ingredients
1 Whole organic free range chicken
salt
ground pepper
herbs de Provence
1.5 c chicken broth
assorted veggies for steaming
potatoes – russet, fingerling or sweet
Directions
Pre heat oven to 350 – roast (if kids are home before you, ask them to do this!)
Rinse bird, pat dry with paper towels
Sprinkle with salt, pepper & herbs
Tuck a small slice of butter under the skin of each breast
Make sure cavity is clear
Place chicken on a roasting pan with a grid (so its slightly lifted off the bottom of the pan)
Place in the oven – middle rack ( If having baked potatoes, you can wrap in foil and place in oven too)
Wash, chop (peel) veggies and potatoes
Go put your bathrobe on and run the bath
After 15 min, pour 1/2 – 3/4 cup of the broth over the chicken, reduce heat to 325 set timer for 35 min and go enjoy a 30 min bath! (with glass of wine or Pink Drink ~ optional)
Check on chicken and remove from oven when thigh temp is between 175- 180 and meat is pulling away from the bones.
Steam and season veggies to your liking potatoes same – can also microwave in a pinch
If your family prefers mashed potatoes (like mine) tell them (with love) to make them themselves because you’re going to take a bath =)
